Broccoli Raisin Salad

Broccoli-Raisin Salad


Basic Inredients:
  1. 4-5 cups fresh broccoli heads
  2. 1 red onion (sliced)
  3. 1/2 pound bacon (cooked and crumbled)
  4. 3/4 cup raisins
  5. 3/4 cup sliced almonds
  6. 1 cup mayo
  7. 1/4 - 1/2 cup white sugar or to taste (use Splenda for no-sugar added recipe)
  8. 2 tablespoons vinegar (white or rice)
Optional or 'Exchange' Ingredients:
  • 1/2 cup sunflower seeds
  • 1/2 cup pine nuts
  • 1 cup of fresh or frozen peas (thawed)
  • 1 cup fresh seedless green grapes (halved)
  • 1 cup fresh celery (chopped)

  1. Cut broccoli into bite-sized pieces

  2. Cut red onion into thin bite-sized slices

  3. Combine broccoli, bacon, raisins, nuts and other ingredients of choice and mix well

  4. Mix mayonnaise, sugar or Splenda, and vinegar together until smooth

  5. Pour over salad and gently toss

  6. Chill completely and serve
