Homemade Half-sugar Pumpkin Bread

Homemade Pumpkin Bread - Half the Sugar


  • 1 can 15 oz pumpkin

  • 2/3 cup butter (softened)

  • 1-1/3 cups sugar

  • 1-1/3 cups Splends®

  • 4 eggs

  • 2/3 cup water

  • 2 teaspoon baking soda

  • 1 teaspoon salt

  • 1/2 teaspoon baking powder

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground cloves

  • 2 teaspoons vanilla

  • 2/3 cup chopped nuts

  • 1/2 cup coconut (options*)
* Use either coconut or raisins, not both to help keep sugars down


  1. Mix softened butter with sugar, Splenda®, add in eggs, water and pumpkin

  2. Blend in vanilla and remaining dry ingredients

  3. Stir in chopped nuts and coconut or raisins

  4. Pour into loaf pans and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean

  5. Cool - refrigerate leftovers.
