Party Tips

......The following tips are for a cocktail buffet party - but the recommended servings and portions could be used for any party where the buffet is not intended to be the full course. The recommendations are based on 75 guests

Finger sandwiches & Hors d'oeuvres 3-4 per person
Olives, carrot and celery sticks, broccoli and cauliflower flowerettes, etc. 2 each per person
Dips One (1) cup typically serves 10 people if served with sturdy crackers or chips. You will need more dip per person if the crackers and chips are apt to crumble.
Chips & Crackers
like potato chips, tortilla chips, crackers, pretzels, etc.
2 bags each (largest size available)
Cheese 2 pounds - very thinly sliced
like ham, turkey, other assorted cold cuts
4 pounds - very thinly sliced
Nuts 2 - 3 pounds
Finger desserts
like petit fours, small tarts, cookies, etc.
2 per person
like cocktail olives, onions, cherries, orange, lemon slices
Small bottle each, or 1-2 of each fruit

Based on a 5 oz. serving, four gallons will serve 100 guests or about 25-30 servings per gallon.
Coffee Based on a 6 oz. serving, estimate 2-1/2 pounds per 100 guests. Don't forget the sugar, artificial sweetners, and cream.
Champagne or wine One bottle (4/5 quart) serves 8 'punch cup' servings or 3 oz. per serving. A case of 12 bottles will serve approximately 100 people based on a 3 oz. serving.
