Tea Cookie


  • 2 eggs (separated)

  • 2/3 cup sugar

  • 1 cup butter (room temperature)

  • 2-1/2 cups flour (sifted)

  • 1 tsp almond extract (OR 1 tsp lemon extract)


  1. Cream butter and sugar together until smooth

  2. Beat egg yolks until lemon color then add in to mixture with extract

  3. Add sifted flour one tablespoon at a time until soft dough is formed

  4. Place in cookie press to use OR form a 1-1/2 inch roll and slice cookies

  5. Bake at 375 degrees on un-greased cookie sheet until cookies are a light brown

Optional: Place a nut, candied fruit piece on top for decoration.
