Applesauce Cake

Applesauce cake with honey, brown sugar and raisins

Ingredients:

1 Cup applesauce (no sugar added OR regular)
7/8 Cup brown sugar (packed)
1/2 Cup melted butter
2 tablespoons honey
1-3/4 Cup flour (sifted)
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon powdered cloves
1/2 cup raisins
1/2 cup nut meat, chopped (pecans, walnuts)

Directions:

Preheat the oven to 350º and butter/flour a 9" square pan.

  1. Mix together applesauce, brown sugar, melted butter and honey
  2. Into a large bowl sift the dry ingredients
  3. Add in the raisins and nuts
  4. Mix the applesauce mixture from Step 1 into the dry ingredients
  5. Blend well and pout into the buttered/floured pan
  6. Bake for 30-40 minutes until a toothpick inserted in the center comes out clean. (Do not over bake)

Cake can be glazed if you like your cake a little sweeter.
