Texas Black-eyed-pea Caviar
Ingredients:
1 15oz. can black-eyed peas (drained)
1 medium-sized tomato (chopped)
1/4 cup canned corn (drained) Optional
3-4 green onions chopped
1 teaspoon minced garlic
1/2 green bell pepper (finely chopped)
1/4 cup cilantro (chopped) Optional
1/2 cup mild picante sauce
salt and pepper to taste
Directions:
Combine all ingredients in a bowl, mix well, cover and chill for 24 hours before serving.
