Chocolate 'Drop' Cookies


Ingredients:

  • 1-1/2 stick butter (softened)
  • 1/3 cup packed light brown sugar
  • 1-1/2 teaspoon vanilla extract
  • 1-1/2 cups all purpose flour (sifted)
  • 24 solid chocolate candies (like Hershey's kisses)


Directions:

Preheat oven to 350 degrees

  1. Mix butter and brown sugar together until light and fluffy (electric mixer works well for this)

  2. Add vanilla

  3. Add flour and cinnamon to butter/sugar mixture

  4. Mix well

  5. Shape dough into 24 balls (approx. 1" in diameter)

  6. Flatten each ball to a 2" circle and place on ungreased cookie sheet about 1" apart

  7. Place 1 chocolate candy in the center of each 'cookie'

  8. Pull the edges of the dough up to enclose the chocolate completely (no openings)

  9. Bake for approximately 15 minutes

  10. Cool cookies for 10 minutes


Note: A mixture of powdered sugar can be sprinkled over the cookes when they come out of the oven for additional flavor. And if you so choose, try any of the flavored candies available during the holiday season.
