Cucumber Salad with Sour Cream


  • Several small, tender cucumbers - peeled and sliced. (about 3-4 cups)

  • Finely chopped celery and red onions (about 1/2 cup each)

  • Equal parts of mayonnaise and sour cream (about 1/2 cup each)

  • Salt & pepper


  1. To the prepared cucumbers add enough finely chopped celery so that the ratio is 4 (cucumbers) to 1 (chopped celery).

  2. In a separate bowl blend the mayonnaise and sour cream in equal parts. Adjust quantity so that there is enough of the mayonnaise/sour cream mixture to hold the cucumbers together.

  3. Add salt and pepper to taste.

  4. Chill for at least 2-3 hours
