Cinnamon-glazed Nuts
 
These glazed nuts make a tasty snack - and are wonderful gifts!
Ingredients:
1/2 cup water
1 cup sugar
1 teaspoon vanilla
5 teaspoons cinnamon
3 cups mixed nuts (cashews, pecans, walnuts are best)
In a small bowl mix the water, sugar and vanilla until well blended and ’syrupy’. Stir in the cinnamon making sure there are no lumps and it is totally incorporated into the syrup mixture. Pour this mixture into a large, non-stick skillet cooking over medium-low heat stirring occasionally.
When the syrup begins to form threads, add in the nuts ** and gently turn the nuts until they are evenly coated. Continue to gently turn and stir until the syrup evaporates and the sugar crystallizes on the nuts. Remove from heat and spread glazed nuts on wax paper to cool. Once cool, store in an airtight container.
** Whole cashews are the most difficult to work with because they tend to break apart releasing their oil into the mix. Therefore make sure that at least half of the nut mixture is of nuts other than cashews.
Not recommended to double this recipe. The end stage where you are turning the nuts in the sugay-mixture would be very difficult to work with more than the three cups of nuts the recipe calls for.
