Incredible Coconut Pie
Incredible because the crust will form on the bottom while baking!


  • 4 eggs
  • 1-1/2 cup sugar
  • 1/2 cup all purpose flour
  • 2 cups milk
  • 1/2 stick butter (melted)
  • 1 teaspoon vanilla
  • 3/4 cup coconut

Preheat oven to 350 degrees
  1. Lightly grease TWO (2) 8" pie pans
  2. Combine all inigredients EXCEPT coconut and process in a blender (low speed) or beat with hand mixer for 2 minutes or until smooth
  3. Pour into two prepared pie plates
  4. Let batter rest for 5 minutes
  5. Sprinkle coconut over tops and press into batter until moist
  6. Bake for 30 minutes or until golden brown

Top with whipped cream and toasted coconut to serve.
