Key Lime Dessert Bars
(Get recipe for half-sugar key lime dessert bars here)



Ingredients:

Crust:

  • 1 cup all purpose flour
  • 1/2 cup butter
  • 1/4 cup powdered sugar

Filling:

  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons grated key lime peel (optional)
  • 2 tablsepoons fresh key lime juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons all-purpose flour
  • Powdered sugar (for topping)
Note: Regular limes can be used, but key limes give the best flavor.



Directions:

Preheat oven to 350 degrees

Crust:

  1. Mix flour, butter and 1/4 cup powdered sugar together

  2. Press into ungreased square pan (8" x 8" x 2") building up the edges to 1/2 inch

  3. Bake for 20 minutes then remove from oven



Filling:

  1. Beat granulated sugar, eggs, flour, key lime peel, key lime juice, baking powder and salt until light and fluffy (approx. 3 min.)

  2. Pour mixture over baked crust layer

  3. Bake until no indentation remains when touched in center, approx. 25 mins.

  4. Cool

  5. Sprinkle with powdered sugar (optional)

  6. Cut into squares of about 1 inch



Makes 64 one-inch squares.
