Lemon Dessert Bars
(Get Half-sugar free recipe here)


Ingredients:

Crust:

  • 1 cup all purpose flour
  • 1/2 cup butter
  • 1/4 cup powdered sugar

Filling:

  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons grated lemon peel (optional)
  • 2 tablsepoons fresh lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar (for topping)


Directions:

Preheat oven to 350 degrees

Crust:

  1. Mix flour, butter and 1/4 cup powdered sugar together

  2. Press into ungreased square pan (8" x 8" x 2") building up the edges to 1/2 inch

  3. Bake for 20 minutes then remove from oven



Filling:

  1. Beat granulated sugar, eggs, lemon peel, lemon juice, baking powder and salt until light and fluffy (approx. 3 min.)

  2. Pour mixture over baked crust layer

  3. Bake until no indentation remains when touched in center, approx. 25 mins.

  4. Cool

  5. Sprinkle with powdered sugar (optional)

  6. Cut into squares of about 1 inch



Makes 64 one-inch squares.
