No-bake Lemon Pie

Make this low-fat by using low-fat cream cheese; make sugar free by using sugar free pudding, lemonade and pie crust.


  • 1-1/2 cups evaporated milk (undiluted)

  • 1 package (3-1/2 oz) INSTANT lemon flavored pudding and pie filling

  • 2 packages (8 oz) of cream cheese (softened)

  • 3/4 cup (6 oz can) frozen lemonade concentrate (thawed)

  • 1 prepared Graham Cracker crust

  • 1 carton of whipped topping (8 oz)


  1. In small mixing bowl, combine evaporated milk and pudding mix, beat 2 minutes, set aside

  2. In large mixing bowl, beat cream cheese until light
  3. Gradually add lemonade concentrate; continue beating until smooth and fluffy (3-4 mins.)

  4. Fold pudding mixture into the cream cheese mixture; blending thoroughly

  5. Pour filling into crust

  6. Chill 3-4 hours (minimum, overnight is better)

  7. Top with whipped cream topping - decorate as desired
