Sugarfree Coconut, Caramel, Pecan Pie

Sugarfree Coconut, Pecan, Caramel Ice Box Pie


  • 1 pie shell, 9" - baked pastry or sugarfree vanilla crumb

  • 1 package of sugarfree vanilla pudding (small size)

  • 1-3/4 cups milk

  • 1/2 teaspoon coconut flavoring

  • 1/3 cup flaked coconut

  • 2 tablespoons chopped pecans

  • 1 container Cool Whip (8 oz., thawed)

  • Sugarfree caramel ice cream topping

  • 2 tablespoons flaked coconut
  • 2 tablespoons chopped pecans
  • In a skillet over medium heat, carefully toast the 2 tablespoons of coconut and pecans for the topping. Stir frequently to keep from burning. Set aside to cool.

Directions :

  1. Prepare the pudding mix per box directions for a pie adding in the coconut flavoring before mixing

  2. Gently fold the 1/3 cup flaked coconut into the prepared pudding

  3. Pour into prepared crust

  4. Spread sugarfree Cool Whip over pudding (to taste)

  5. Sprinkle the toasted pecans and coconut over the top

  6. Chill at least 1-2 hours
  7. Before serving, drizzle a litle of the sugarfree caramel topping over the top.
