
Sugarfree Coconut, Pecan, Caramel Ice Box Pie
Ingredients:
1 pie shell, 9" - baked pastry or sugarfree vanilla crumb
1 package of sugarfree vanilla pudding (small size)
1-3/4 cups milk
1/2 teaspoon coconut flavoring
1/3 cup flaked coconut
2 tablespoons chopped pecans
1 container Cool Whip (8 oz., thawed)
Sugarfree caramel ice cream topping
Topping:
2 tablespoons flaked coconut
2 tablespoons chopped pecans
Directions :
In a skillet over medium heat, carefully toast the 2 tablespoons of coconut and pecans for the topping. Stir frequently to keep from burning. Set aside to cool.
- Prepare the pudding mix per box directions for a pie adding in the coconut flavoring before mixing
- Gently fold the 1/3 cup flaked coconut into the prepared pudding
- Pour into prepared crust
- Spread sugarfree Cool Whip over pudding (to taste)
- Sprinkle the toasted pecans and coconut over the top
- Chill at least 1-2 hours
- Before serving, drizzle a litle of the sugarfree caramel topping over the top.
