
Sugarfree Funnel Cakes
Ingredients:
- 2 cups milk
- 2 eggs (beaten)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups flour (all purpose)
Directions:
- Combine all dry ingredients
- Add milk, use a whisk to mix so there are no lumps
- Batter consistency should be thin enough to pour through a funnel. If too thick add a little more milk; if too thick add a little more flour.
- Pour batter through a funnel into hot oil. Spiral and shape the cake by manipulting the funnel as the batter goes into the oil. Oil should be deep enough to cover the funnel cake.
- Remove funnel cake from oil and drain on paper towels.
- While hot, sprinkle with powdered sugar made from Splenda®
