Sweet-Sour Meatballs

Sweet-Sour Meatballs


  • 2 cups pineapple chunks

  • 1/3 cup water

  • 3 tablespoons rice vinegar

  • 1 table low-sodium soy sauce

  • 1/2 cup packed light brown sugar

  • 3 tablespoons corn starch

  • 30 cooked meatballs (approx. 1" in diameter)

  • Optional: 1/2 bell pepper cut into bite-sized pieces


  • Drain pineapple and set aside (reserve juice)

  • Add enough water to juice to make 1 cup of liquid

  • Pour juice into skillet and add 1/3 cup water, vinegar, soy sauce, brown sugar and corn starch

  • Stir with whisk until smooth
  • Cook over medium low heat until thickened, stirring continuously

  • Add pineapple chunks, cooked meatballs, and pepper (optional)

  • Simmer over low heat for approximately 15 minutes or until completely heated through

Serve these delicious meatballs over rice, with spaghetti or in a toasted panni sandwich.
