Zuchinni Bread Recipe

Zuchinni Bread

Ingredients:

  • 2 small or 1 medium sized zucchini grated
  • 1/3 cup butter (softened)
  • 1-1/3 cups sugar
  • 2 eggs
  • 1/3 cup water
  • 1-2/3 cup flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon vanilla
  • 1/3 cup chopped nuts (I like pecans)


Optional ingredients:
1/3 cup raisins
1/3 cup flaked coconut

Heat oven to 350 degrees. Grease the bottom only of a loaf pan (9x5x3).

Directions:

  1. Mix butter and sugar; add in eggs, water and zucchini.
  2. Blend in flour, vanilla and remaining dry ingredients.
  3. Stir in nuts and optional ingredients if using.
  4. Pour into pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool completely before slicing.
  6. Refrigerate any leftovers for up to 10 days.
