
Zuchinni Bread
Ingredients:
- 2 small or 1 medium sized zucchini grated
- 1/3 cup butter (softened)
- 1-1/3 cups sugar
- 2 eggs
- 1/3 cup water
- 1-2/3 cup flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1 teaspoon vanilla
- 1/3 cup chopped nuts (I like pecans)
Optional ingredients:
1/3 cup raisins
1/3 cup flaked coconut
Heat oven to 350 degrees. Grease the bottom only of a loaf pan (9x5x3).
Directions:
- Mix butter and sugar; add in eggs, water and zucchini.
- Blend in flour, vanilla and remaining dry ingredients.
- Stir in nuts and optional ingredients if using.
- Pour into pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely before slicing.
- Refrigerate any leftovers for up to 10 days.
